The production journey follows these essential stages:
Hand-Picking: Farmers selectively hand-pick only the bright red, perfectly ripe coffee cherries from the trees, leaving the green ones to ripen further.
Depulping & Washing: The outer skin of the cherry is removed by a machine, and the sticky beans inside are placed in water tanks to ferment naturally. This "washed process" strips away the fruit cleanly, which is the secret behind the crisp, bright flavour profile Colombia is famous for.
Sun-Drying: The washed beans are spread out on large open-air patios or raised beds to dry naturally under the tropical sun until they reach the perfect moisture level.
